Sweet Blueberry Muffins

Ingredients: 1egg 1/2 cup milk 1/4 cup salad oil |
1 1/2 cups all purpose flour 1/2 cup sugar 2 tsp. baking powder 1/2 tsp. salt 1 cup fresh or 3/4 cup frozen blueberries |
Heat oven to 400 degrees. Spray nonstick cooking spray into muffin pan. Beat egg; stir in milk and oil. Mix in dry ingredients just until flour is moistened. Stir in blueberries. Batter should be lumpy and moist. Fill 9-12 muffin cups either 2/3 full or full. Bake 20 to 25 minutes or until a gentle touch pops back up and the muffins are golden brown. Remove from pan immediately. |
